If the origin of cheese dates back to the dawn of time, there are also historical and geophysical reasons why it has remained a French characteristic throughout the centuries. This will be explained in the next editorials.
Cheese has always belonged to the elementary food products for people living in the countryside but it was necessary to wait until coming of the railway for cheese to travel and arrive on the tables of city dwellers.
Despite its very old origins, it is only natural that cheese should cover the world via Internet. And we are pleased to be telling its story.
We want to make it clear from outset that we are dealing here, with unpasteurized cheeses, due to their particular tastes and out of respect for the cheesemakers ancestral rules themselves.
